  • 1 count Baguette, sliced into ½ inch pieces
  • 1 cup Cherries, pitted (fresh or frozen)
  • 4 ounces Goat cheese, softened
  • ¼ cup Fresh basil leaves, chopped
  • 2 tablespoons Olive oil
  • to taste Salt
  • to taste Pepper
  • Balsamic glaze (optional) for drizzling

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). If using fresh cherries, wash, pit, and slice them in half. If using frozen cherries, allow them to thaw and drain excess liquid.
  2. Place the cherries on a baking sheet and drizzle with 1 tablespoon of olive oil. Add salt and pepper to taste and toss to coat. Roast in the oven for about 15-20 minutes, or until tender and caramelized.
Grilling
  1. While the cherries are roasting, heat a grill pan over medium heat. Brush both sides of the baguette slices with olive oil.
  2. Grill for 2-3 minutes on each side or until they have beautiful grill marks and are crispy.
Assembly
  1. Spread a generous layer of softened goat cheese on each grilled baguette slice.
  2. Top with roasted cherries and sprinkle with chopped basil.
Serving
  1. Drizzle with balsamic glaze, if using, and serve immediately.

Notes

Choose quality ingredients for the best flavor. Experiment with different types of bread and toppings. Store leftovers in an airtight container in the fridge for up to two days. Reheat before serving.
