Preparation
- Preheat your oven to 375°F (190°C). If using fresh cherries, wash, pit, and slice them in half. If using frozen cherries, allow them to thaw and drain excess liquid.
- Place the cherries on a baking sheet and drizzle with 1 tablespoon of olive oil. Add salt and pepper to taste and toss to coat. Roast in the oven for about 15-20 minutes, or until tender and caramelized.
Grilling
- While the cherries are roasting, heat a grill pan over medium heat. Brush both sides of the baguette slices with olive oil.
- Grill for 2-3 minutes on each side or until they have beautiful grill marks and are crispy.
Assembly
- Spread a generous layer of softened goat cheese on each grilled baguette slice.
- Top with roasted cherries and sprinkle with chopped basil.
Serving
- Drizzle with balsamic glaze, if using, and serve immediately.
