Preparation
- Season the chicken breasts with salt and pepper. In a skillet or on a grill, heat olive oil over medium-high heat.
- Grill the chicken for 6-7 minutes on each side until fully cooked. Remove the chicken and let it rest for a few minutes before slicing.
Assembly
- Lay out your slices of bread. On one slice, layer the mozzarella cheese, followed by grilled chicken slices, and then the cheddar cheese. Finally, top it with pepper jack cheese.
Grilling
- Place the other slice of bread on top to form a sandwich. Butter the outer sides of both slices of bread.
- Heat a clean skillet over medium heat, and place the sandwich in the skillet. Grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.
Serving
- Once golden and crispy, remove the sandwich from the skillet. Allow it to cool slightly, then cut it in half and enjoy.
Notes
Consider adding fresh greens or your favorite condiments. For extra flavor, marinate your chicken in olive oil, lemon juice, and garlic before grilling. Use a panini press for enhanced grilling.
