  • 1 pound boneless, skinless chicken breast, cut into cubes
  • 2 pieces bell peppers (any color), cut into chunks
  • 1 large onion, cut into chunks
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • Skewers (wooden or metal) If using wooden skewers, soak them in water for 30 minutes to prevent burning.

Preparation and Marination
  1. In a large bowl, combine olive oil, minced garlic, paprika, salt, and pepper. Whisk until blended.
  2. Add chicken cubes to the marinade, ensuring they're well coated. Cover and let sit for at least 15 minutes (or longer for more flavor).
Assembly and Cooking
  1. Begin by threading the marinated chicken onto skewers, followed by chunks of bell pepper and onion. Alternate the ingredients for a pop of color!
  2. Heat your grill to medium-high temperature.
  3. Place the skewers on the grill, cooking for about 10–15 minutes, turning every 4–5 minutes until the chicken is fully cooked and vegetables are slightly charred.
Serving
  1. Carefully remove the kabobs from the grill and let them rest for a few minutes. Serve hot with your favorite dip or over a bed of rice.

Notes

For an extra touch, add fresh herbs like cilantro or parsley to your marinade. Experiment with different vegetables such as zucchini or cherry tomatoes. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months. Reheat on the grill or in the oven at 350°F for about 10-15 minutes.
