Baking Process
- Preheat your oven to 375°F (190°C).
- In a medium bowl, whisk together all-purpose flour, baking soda, and baking powder. Set aside.
- In a large bowl, cream the softened butter and white sugar together until light and fluffy—about 2-3 minutes.
- Add the egg, vanilla extract, and almond extract to the mixture and mix until fully combined.
- Gradually add the dry ingredient mixture into the butter mixture, mixing just until incorporated.
- Use a cookie scoop or tablespoon to portion out cookie dough onto parchment-lined baking sheets. Roll each scoop in your hands, then gently press down to flatten slightly.
- Generously sprinkle green sugar on top of each cookie before baking.
- Bake for 8-10 minutes or until the edges are golden.
- Allow the cookies to sit on the tray for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze in a bag for up to three months. To reheat, preheat oven to 350°F (175°C) and warm cookies for about 5 minutes.
