  • 1 teaspoon 1 teaspoon baking soda
  • 1/2 teaspoon 1/2 teaspoon baking powder
  • 1 cup 1 cup butter, softened Ensure butter is softened for easy mixing.
  • 1 1/2 cups 1 1/2 cups white sugar
  • 1 large 1 egg
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1/2 teaspoon 1/2 teaspoon almond extract
  • 1/4 cup 1/4 cup green sugar for decoration Generously sprinkle on top before baking.

Method
 

Baking Process
  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together all-purpose flour, baking soda, and baking powder. Set aside.
  3. In a large bowl, cream the softened butter and white sugar together until light and fluffy—about 2-3 minutes.
  4. Add the egg, vanilla extract, and almond extract to the mixture and mix until fully combined.
  5. Gradually add the dry ingredient mixture into the butter mixture, mixing just until incorporated.
  6. Use a cookie scoop or tablespoon to portion out cookie dough onto parchment-lined baking sheets. Roll each scoop in your hands, then gently press down to flatten slightly.
  7. Generously sprinkle green sugar on top of each cookie before baking.
  8. Bake for 8-10 minutes or until the edges are golden.
  9. Allow the cookies to sit on the tray for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze in a bag for up to three months. To reheat, preheat oven to 350°F (175°C) and warm cookies for about 5 minutes.
