  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup bell pepper, diced (any color)
  • 1/2 large red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • 2 tablespoons fresh parsley, chopped

Method
 

Preparation
  1. Rinse and drain the chickpeas, then chop the cherry tomatoes, cucumber, and bell pepper into bite-sized pieces. Slice the red onion thinly.
Mixing
  1. In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, bell pepper, and red onion. Toss to mix evenly.
Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad mixture and mix well.
Toppings
  1. Sprinkle the crumbled feta cheese and chopped parsley over the salad. Gently toss once more.
Serving
  1. Serve immediately for the freshest taste, or let it chill in the refrigerator for 30 minutes to meld flavors.

Notes

To elevate your salad, consider using goat cheese instead of feta. This salad is best enjoyed cold or at room temperature. Store leftovers in an airtight container for up to three days.
