  • 2 pieces flatbreads or pita breads Can use any type of flatbread
  • 2 cups cooked chicken, shredded Use leftover chicken for quicker prep
Vegetables
  • 1 cup cucumber, diced Fresh cucumbers add crunch
  • 1 cup cherry tomatoes, halved Use ripe tomatoes for the best flavor
  • 1/2 cup red onion, thinly sliced Can substitute with white onion if preferred
Toppings
  • 1/2 cup feta cheese, crumbled For a creamier texture, use higher-fat feta
  • 1/4 cup Kalamata olives, sliced Adds a briny flavor
  • 1/2 cup tzatziki sauce Store-bought or homemade tzatziki works
  • 1 tablespoon olive oil For brushing flatbreads
  • to taste Salt and pepper Use sea salt for better flavor

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Lightly brush each flatbread with olive oil on both sides.
  3. Arrange the flatbreads on a baking sheet and evenly distribute the shredded chicken.
  4. Layer the diced cucumber, halved cherry tomatoes, and sliced red onion over the chicken.
  5. Sprinkle the crumbled feta cheese and sliced Kalamata olives evenly on top.
Baking
  1. Place the baking sheet in the oven and bake for about 10 minutes or until the flatbreads are crisp and the cheese is slightly melted.
Serving
  1. Remove from the oven, drizzle generously with tzatziki sauce, and season with salt and pepper to taste.
  2. Cut into slices, serve warm, and enjoy!

Notes

For lean protein, substitute shredded turkey. For a vegetarian option, consider grilled veggies or chickpeas. Store leftovers in an airtight container in the refrigerator for up to 2 days.
