  • 6 large hard-boiled eggs (peeled and grated)
  • 1/4 cup mayonnaise
  • 1 tsp mustard (yellow or Dijon)
  • to taste Salt
  • to taste Pepper
  • 1/2 cup celery (finely grated)
  • 1/4 cup onion (finely grated)

Method
 

Preparation
  1. Boil the eggs in a pot of water for about 10-12 minutes. Once done, place them in cold water to cool before peeling.
  2. Once the eggs are cool, use a grater to finely grate them into a mixing bowl for a smooth texture.
  3. Add the mayonnaise, mustard, grated celery, and grated onion to the bowl with the grated eggs. Mix gently with a spatula or spoon.
  4. Sprinkle salt and pepper according to your taste preferences. Keep tasting as you go.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Serve on a slice of bread, in a wrap, or directly from the bowl.

Notes

For a lighter option, replace some of the mayonnaise with Greek yogurt. Enhance flavors with fresh herbs like dill or parsley. Add celery just before serving to maintain its crunch.
