- In a large pot over medium heat, add the ground beef (or turkey) along with the diced onion. Cook until the meat is browned and the onions are translucent, about 5-7 minutes.
- Stir in the green bell pepper and minced garlic, cooking for an additional 2-3 minutes until the vegetables soften.
- Pour in the diced tomatoes with their juices, beef broth, and Worcestershire sauce. Stir to combine and let it simmer for about 10 minutes on low heat.
- Add the elbow macaroni and Italian seasoning, stirring well. Cover and cook for about 8-10 minutes until the pasta is tender.
- Taste and season with salt and pepper as needed. If desired, garnish with chopped parsley before serving.
- Spoon into bowls and top with any additional toppings like sour cream or cheese before digging in!
Notes
For a vegetarian option, substitute ground beef with lentils or chickpeas. To prevent mushy pasta, add macaroni only once the broth mixture is simmering.
