  • 1 lb ground beef (or turkey)
  • 1 large onion, diced
  • 1 large green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes with their juices
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 cups elbow macaroni uncooked
  • 1 tablespoon Italian seasoning
  • to taste Salt
  • to taste Pepper

Preparation
  1. In a large pot over medium heat, add the ground beef (or turkey) along with the diced onion. Cook until the meat is browned and the onions are translucent, about 5-7 minutes.
  2. Stir in the green bell pepper and minced garlic, cooking for an additional 2-3 minutes until the vegetables soften.
  3. Pour in the diced tomatoes with their juices, beef broth, and Worcestershire sauce. Stir to combine and let it simmer for about 10 minutes on low heat.
  4. Add the elbow macaroni and Italian seasoning, stirring well. Cover and cook for about 8-10 minutes until the pasta is tender.
  5. Taste and season with salt and pepper as needed. If desired, garnish with chopped parsley before serving.
  6. Spoon into bowls and top with any additional toppings like sour cream or cheese before digging in!

Notes

For a vegetarian option, substitute ground beef with lentils or chickpeas. To prevent mushy pasta, add macaroni only once the broth mixture is simmering.
