  • 1 count ripe golden pineapple, peeled and sliced
  • 1 cup sugar
  • 1 cup flour Sifted for best texture
  • 1/2 cup butter, softened Do not melt
  • 2 count eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Peel and slice the ripe golden pineapple into thin rings or chunks. Set aside.
  3. In a medium bowl, whisk together the flour, baking powder, and salt.
  4. In a larger mixing bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
  5. Beat in the eggs, one at a time, ensuring they are fully incorporated.
  6. Gradually mix the dry ingredient blend into the wet ingredients, alternating with the vanilla extract.
  7. Gently fold in the sliced pineapple.
  8. Grease a 9x9 inch baking dish and pour the batter evenly into it.
Baking
  1. Place in the oven and bake for about 25-30 minutes, or until golden brown and a toothpick inserted comes out clean.
Serving
  1. Let the bake cool for about 10 minutes before serving.
  2. Serve warm or at room temperature.

Notes

For a lighter version, consider using coconut oil instead of butter. Ensure butter is softened but not melted for best texture.
