Preparation of Toast
- Preheat your oven to 375°F (190°C). Arrange the sliced baguette on a baking sheet. Brush each slice lightly with olive oil.
- Bake for about 10 minutes, or until golden and crispy. Keep an eye on them.
Cooking the Onions
- While the toast is baking, heat a skillet over medium heat. Add a tablespoon of olive oil and once it’s hot, toss in the sliced onions. Stir occasionally for about 15-20 minutes, allowing them to caramelize to a beautiful golden brown.
- Stir in the honey, then season with salt and pepper to taste. Cook for another 2-3 minutes until everything is combined beautifully and the honey has thickened slightly.
Assembling the Toasts
- Once the toast is ready, spread a generous layer of softened goat cheese on each slice.
- Top with a spoonful of the honey onion compote and drizzle any leftover honey on top for extra sweetness.
Garnishing and Serving
- If you’re feeling fancy, sprinkle a few fresh thyme leaves over the top.
- Enjoy while warm!
Notes
If you have leftovers, store the honey onion compote in an airtight container in the fridge for up to a week. Reheat gently when ready to serve. Toast is best enjoyed fresh but can be revived in the oven.
