Ingredients
  

Toast Base
  • 1 whole French baguette or your choice of bread, sliced
  • 8 ounces goat cheese, softened
Honey Onion Compote
  • 2 medium onions, thinly sliced
  • 3 tablespoons honey
  • 2 tablespoons olive oil Plus one tablespoon for caramelizing the onions
  • Salt and pepper to taste
  • Fresh thyme (optional) For garnish

Method
 

Preparation of Toast
  1. Preheat your oven to 375°F (190°C). Arrange the sliced baguette on a baking sheet. Brush each slice lightly with olive oil.
  2. Bake for about 10 minutes, or until golden and crispy. Keep an eye on them.
Cooking the Onions
  1. While the toast is baking, heat a skillet over medium heat. Add a tablespoon of olive oil and once it’s hot, toss in the sliced onions. Stir occasionally for about 15-20 minutes, allowing them to caramelize to a beautiful golden brown.
  2. Stir in the honey, then season with salt and pepper to taste. Cook for another 2-3 minutes until everything is combined beautifully and the honey has thickened slightly.
Assembling the Toasts
  1. Once the toast is ready, spread a generous layer of softened goat cheese on each slice.
  2. Top with a spoonful of the honey onion compote and drizzle any leftover honey on top for extra sweetness.
Garnishing and Serving
  1. If you’re feeling fancy, sprinkle a few fresh thyme leaves over the top.
  2. Enjoy while warm!

Notes

If you have leftovers, store the honey onion compote in an airtight container in the fridge for up to a week. Reheat gently when ready to serve. Toast is best enjoyed fresh but can be revived in the oven.
