Ingredients
  

For the soup
  • 1 package gnocchi Fresh or shelf-stable
  • 1 tablespoon olive oil For sautéing
  • 1 onion, chopped Yellow or white onion
  • 3 cloves garlic, minced Fresh garlic
  • 4 cups chicken broth Low sodium recommended
  • 1 cup kale, chopped Or spinach as a substitute
  • 1 cup heavy cream For a creamy texture
  • to taste Salt and pepper For seasoning
  • Grated cheese Parmesan cheese for serving Optional topping

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
  3. Toss in the minced garlic and sauté for an additional minute, until fragrant.
Cooking
  1. Pour in the chicken broth and bring to a simmer.
  2. Once the broth is simmering, add the gnocchi and cook for around 2-3 minutes, or until they float to the top.
  3. Add the chopped kale and let it wilt in the broth for about 2 minutes.
  4. Stir in the heavy cream and season with salt and pepper to taste, allowing everything to warm up together for another few minutes.
Serving
  1. Ladle the soup into bowls and add a generous sprinkle of grated Parmesan cheese on top.

Notes

Substitutions: Use spinach instead of kale or coconut milk for a dairy-free option. Store leftovers in an airtight container in the refrigerator for up to 3 days, and freeze without cream if desired.
