Ingredients

  • 1 cup gluten-free chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
For the mousse filling
  • 8 ounces dark chocolate, chopped
  • 3 cups heavy cream Can substitute with coconut cream for a dairy-free option.
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Method
 

Preparation
  1. In a mixing bowl, combine the gluten-free chocolate cookie crumbs with the melted unsalted butter. Mix until well blended.
  2. Press the mixture into the bottom of a springform pan to create an even crust.
Chocolate Mousse
  1. Place the chopped dark chocolate in a double boiler or a heat-safe bowl over simmering water. Stir until fully melted and smooth. Remove from heat and let it cool slightly.
  2. In a large bowl, pour in the heavy cream, sugar, vanilla extract, and salt. Using an electric mixer, whip the mixture until thick peaks form.
  3. Gently fold the melted dark chocolate into the whipped cream mixture. Be careful not to deflate the cream; you want to maintain that light, airy consistency.
  4. Once the chocolate is fully incorporated, pour the mousse over the prepared cookie crust in the springform pan. Smooth out the top with a spatula.
Chilling
  1. Cover the cake with plastic wrap and place it in the refrigerator for at least 4 hours or overnight for best results.
Serving
  1. When ready to serve, carefully remove the springform pan. You can decorate it with toppings of your choice, like crushed nuts or whipped cream.

Notes

If you have any leftover Gluten-Free Chocolate Mousse Cake, you can store it in an airtight container in the refrigerator for up to 5 days. If you want to freeze it, slice the cake and lay it flat in a freezer-safe container. It can last up to 3 months. To reheat, simply let it thaw in the refrigerator overnight.
