Wet Ingredients
  • 0.5 cups unsalted butter, softened
  • 0.5 cups packed brown sugar
  • 1 cup molasses
  • 2 large eggs
  • 1 cup hot water Add gradually to the mixture

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking pan by greasing it lightly.
  2. In a large bowl, whisk together flour, baking soda, ground ginger, cinnamon, cloves, and salt. Set this mixture aside.
  3. In a separate bowl, cream together the softened butter and brown sugar until fluffy.
  4. Beat in the molasses and eggs until well combined.
  5. Gradually add the dry mixture to the butter-sugar mixture, alternating with hot water until everything is mixed well and smooth.
Baking
  1. Pour your batter into the prepared baking pan and smooth it out evenly.
  2. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Cooling and Serving
  1. Let the cake cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
  2. Cut slices and serve warm or at room temperature topped with whipped cream or a drizzle of honey if desired.

Notes

Ensure to use fresh spices for the best flavor. Store the cake wrapped in plastic wrap or in an airtight container. It stays fresh for about 5 days in the refrigerator and can be frozen for up to 2 months.
