Ingredients
  

Pancake Batter
  • 6 large large eggs
  • 1 cup all-purpose flour
  • 1 cup milk (whole or 2% preferred)
  • 1/4 cup unsalted butter, melted for greasing the baking dish
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract (optional) adds flavor to the batter

  • Powdered sugar for serving (optional)
  • Fresh fruit and syrup for serving (optional)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a 9x13 inch baking dish, add the melted butter, allowing it to coat the bottom evenly.
Mixing the Batter
  1. In a large mixing bowl, whisk together the eggs, flour, milk, salt, and vanilla extract until smooth. No lumps allowed!
Baking
  1. Carefully pour the batter into the prepared baking dish over the melted butter.
  2. Bake in the preheated oven for about 20 minutes, or until the edges are golden and puffed.
Serving
  1. Remove the pancakes from the oven and let them cool slightly.
  2. Dust with powdered sugar and serve with your choice of toppings like fresh fruit or maple syrup.

Notes

Store leftovers at room temperature for a few hours, or refrigerate for up to 2 days. Reheat in the oven at 350°F (175°C) for 5-10 minutes or in the microwave for 30 seconds. Freeze for up to a month with parchment paper between layers.
