  • 1 pound steak (such as sirloin or ribeye)
  • 4 medium potatoes, diced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil

  • Fresh herbs (like rosemary or thyme) for garnish

Method
 

Preparation
  1. Cut four large pieces of aluminum foil, approximately 12x18 inches each. Lay them out flat on a clean surface.
  2. In a large bowl, combine the diced potatoes, minced garlic, olive oil, salt, and pepper. Toss everything well to ensure the potatoes are coated evenly.
  3. Slice the steak into bite-sized pieces. Season with additional salt and pepper if desired.
  4. Place an equal amount of the potato mixture in the center of each foil sheet. Top each with an equal portion of the steak.
  5. Fold the sides of the foil over the ingredients, then fold the ends to create a sealed package. Make sure it's tightly wrapped to keep the juices inside.
Cooking
  1. Grilling: Preheat your grill to medium-high heat and place the foil packs on the grill. Cook for about 25-30 minutes, flipping halfway through.
  2. Oven: Preheat your oven to 400°F (200°C) and place the foil packs on a baking sheet. Bake for about 30-35 minutes.
Serving
  1. Carefully open each foil pack (beware of steam!), garnish with fresh herbs, and serve immediately.

Notes

Have leftovers? Store in the refrigerator for up to 3 days or freeze for up to a month. Reheat in a 350°F (175°C) oven for about 15-20 minutes.
