Preparation
- Cut four large pieces of aluminum foil, approximately 12x18 inches each. Lay them out flat on a clean surface.
- In a large bowl, combine the diced potatoes, minced garlic, olive oil, salt, and pepper. Toss everything well to ensure the potatoes are coated evenly.
- Slice the steak into bite-sized pieces. Season with additional salt and pepper if desired.
- Place an equal amount of the potato mixture in the center of each foil sheet. Top each with an equal portion of the steak.
- Fold the sides of the foil over the ingredients, then fold the ends to create a sealed package. Make sure it's tightly wrapped to keep the juices inside.
Cooking
- Grilling: Preheat your grill to medium-high heat and place the foil packs on the grill. Cook for about 25-30 minutes, flipping halfway through.
- Oven: Preheat your oven to 400°F (200°C) and place the foil packs on a baking sheet. Bake for about 30-35 minutes.
Serving
- Carefully open each foil pack (beware of steam!), garnish with fresh herbs, and serve immediately.
Notes
Have leftovers? Store in the refrigerator for up to 3 days or freeze for up to a month. Reheat in a 350°F (175°C) oven for about 15-20 minutes.
