  • 1 pound medium shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes adjust to preference
  • 1 cup cherry tomatoes, halved
  • 1 lemon juiced
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Preparation
  1. Boil the Tortellini: Cook the tortellini according to the package instructions, usually about 3-5 minutes. Once cooked, drain and set aside.
  2. Sauté the Shrimp: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant (about 30 seconds).
  3. Cook the Shrimp: Add the shrimp to the skillet, cooking for about 2-3 minutes on each side, until they turn pink. Season with salt and pepper during cooking.
  4. Combine: Toss in the cherry tomatoes and cooked tortellini, mixing everything together. Squeeze fresh lemon juice over the top and stir to combine well.
  5. Serve: Garnish with fresh parsley and additional salt and pepper if desired. Serve hot!

Notes

Feel free to substitute chicken or vegetables instead of shrimp if preferred. Avoid crowding the pan for even cooking. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage.
