Preparation
  1. Start by washing and drying the zucchinis. Slice them into even rounds about 1/4 inch thick or half-moons.
Cooking
  1. In a large skillet, heat the olive oil over medium-high heat for about a minute until it shimmers.
  2. Add the minced garlic to the heated oil and sauté for about 30 seconds until fragrant, avoiding burning.
  3. Add the zucchini slices to the skillet in a single layer. Season with salt and pepper, then sauté for about 4-5 minutes until tender and slightly golden, tossing occasionally.
  4. Taste and adjust the seasoning with salt and pepper as needed.
  5. Transfer to a serving dish and enjoy hot.

Notes

This dish can be paired with grilled chicken or fish, or served as a side to any meal. Leftovers can be stored in the refrigerator for 3-5 days or frozen for up to three months. Reheat in a skillet or microwave.
