Ingredients
  

For the meatloaf
  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 ea egg, beaten
  • 1/4 cup parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1/4 cup milk

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) while you prepare the meatloaf.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, beaten egg, chopped parsley, salt, black pepper, Italian seasoning, and milk. Use your hands to mix everything together until well blended.
  3. Transfer the mixture to a lined baking tray or a meatloaf pan. Shape it into a loaf, smoothing the top and sides.
Baking
  1. Place the meatloaf in the oven and bake for about 50-60 minutes until cooked through (internal temperature should reach 165°F or 74°C) and the top is golden brown.
  2. Once baked, let your meatloaf rest for about 10 minutes. Slice, serve, and enjoy!

Notes

For added flavor, consider adding diced bell peppers or shredded zucchini. Avoid overmixing to maintain a light texture. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
