Preparation
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, salt, pepper, and Italian seasoning. Spread them out in a single layer on a baking sheet.
- In the same bowl, add the chicken breasts and drizzle with the remaining tablespoon of olive oil and minced garlic. Sprinkle with salt, pepper, and half of the Parmesan cheese on both sides. Rub the seasoning into the chicken for maximum flavor.
Cooking
- Place the seasoned chicken breasts on the baking sheet with the potatoes. Ensure that there’s some space between each piece for even cooking.
- Bake in the preheated oven for about 20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are golden brown.
- Remove the baking sheet from the oven, sprinkle the remaining Parmesan cheese over the chicken breasts, and return to the oven for an additional 5 minutes until the cheese is melted and bubbly.
- Once done, garnish with fresh parsley, serve immediately, and enjoy your delicious Garlic Parmesan Chicken and Potatoes!
Notes
For maximum flavor, marinate the chicken in the olive oil, garlic, and seasonings for at least 30 minutes. Substitute Italian seasoning for your favorite spice blend if desired. Check the cooking time for thinner chicken breasts.
