  • 4 pieces boneless, skinless chicken breasts
  • 4 large potatoes, diced
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian herbs (like oregano or basil)
  • 1/4 cup olive oil

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the diced potatoes with olive oil, salt, pepper, and half of the grated parmesan. Toss them until evenly coated.
  3. Spread the seasoned potatoes in a single layer in a baking dish. Set them aside.
  4. In the same mixing bowl, combine the chicken breasts with minced garlic, Italian herbs, salt, and pepper. Make sure they're well coated.
  5. Place the chicken breasts on top of the potatoes in the baking dish, ensuring the garlic mixture is evenly distributed.
  6. Sprinkle the remaining parmesan cheese over the chicken and potatoes.
Cooking
  1. Bake in the preheated oven for 25-30 minutes until the chicken is cooked through and the potatoes are tender and golden brown.
  2. Remove from the oven, let it rest for a few minutes, then garnish with fresh parsley if desired. Serve hot and enjoy!

Notes

For best results, slice thick chicken breasts in half to ensure even cooking. You can use different potato varieties for a twist on texture and taste. Adjust garlic and parmesan to your liking.
