  • 500 g Baby Potatoes (halved) Feel free to use fingerlings or any small new potatoes.
  • 4 tablespoons Olive Oil
  • 3-4 cloves Garlic (chopped)
  • 2 tablespoons Fresh Herbs (like rosemary, thyme, or parsley, chopped) Dried herbs can be used instead; use about a third of the amount.
  • Salt (to taste)
  • Pepper (to taste)

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, combine the halved baby potatoes with olive oil, chopped garlic, salt, and pepper. Toss until evenly coated.
  3. Gently fold in your choice of fresh herbs.
Cooking
  1. Spread the potatoes out on a baking sheet in a single layer and roast for 25-30 minutes, or until golden and crispy.
  2. Once roasted, gently stir the potatoes to distribute the crispy parts. Optionally, add more salt or fresh herbs before serving.
Serving
  1. Serve warm as a delightful side dish.

Notes

For extra crispiness, increase the oven temperature to 220°C (425°F) during the last 5-10 minutes. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 2 months. Reheat in the oven at 180°C (350°F) for 10-15 minutes.
