Preparation
- Cut the chicken breasts into bite-sized pieces and season them with salt and pepper.
- In a large skillet, heat the olive oil over medium heat until shimmering.
Cooking
- Add the seasoned chicken to the skillet and sauté until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
- In the same skillet, add the minced garlic and sauté for about 30 seconds, until fragrant. Be careful not to let it burn!
- Pour in the chicken broth, bringing it to a simmer. Then, stir in the heavy cream, allowing it to thicken slightly.
- Add the gnocchi to the skillet, and cook according to package instructions (usually about 2-3 minutes). The gnocchi will float to the top when it's done.
- Return the cooked chicken to the skillet, adding the spinach and sun-dried tomatoes. Stir until the spinach wilts, about 2 minutes.
- Taste and adjust the seasoning if necessary. Garnish with fresh basil, serve hot, and enjoy your delicious meal!
