Ingredients
  

For the Meatballs
  • 1 pound ground turkey A healthier alternative to traditional red meats.
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced Add flavor to the meatballs.
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper For seasoning.
For Cooking
  • 3 tablespoons butter Divided: 2 for cooking meatballs and 1 for noodles.
For the Zucchini Noodles
  • 2 medium zucchinis, spiralized Adds a fresh twist.
  • Juice of 1 lemon lemon juice For flavor enhancement.
  • to taste Fresh parsley, for garnish Adds a refreshing touch.

Method
 

Preparation of Meatballs
  1. In a large mixing bowl, combine the ground turkey, breadcrumbs, grated Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix with your hands until well combined but avoid overmixing.
  2. Form small balls from the mixture, about 1-2 tablespoons each, and place them on a platter.
Cooking
  1. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the meatballs without crowding them.
  2. Cook for about 6-8 minutes on each side until they are golden brown and cooked through (internal temperature should reach 165°F).
  3. In the same skillet, lower the heat and add the remaining tablespoon of butter. Add the spiralized zucchini noodles and sauté for 2-3 minutes until slightly softened but still crisp.
  4. Squeeze lemon juice over the zucchini noodles and toss quickly. Return the cooked meatballs to the skillet to warm through for another minute.
  5. Plate the meatballs over the zucchini noodles and garnish with fresh parsley.

Notes

For substitutions, ground chicken or beef can be used. To avoid overcooking meatballs, maintain medium heat. Be cautious with zucchini noodles to keep a crisp texture.
