  • 1 pound steak (sirloin or ribeye)
  • 4 medium-sized potatoes, diced
  • 1/4 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary or thyme, chopped Optional herbs

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) or set up your grill for medium-high heat.
  2. Season your steak with salt and pepper on both sides. For extra flavor, you can rub it with minced garlic, or let it marinate for a bit if you prefer.
  3. In a large bowl, combine diced potatoes with melted butter, minced garlic, fresh herbs, salt, and pepper. Toss them well to ensure even coverage.
  4. Cut large pieces of aluminum foil (about 12 inches long). Place a generous amount of the potato mixture in the center of each piece. Top it with pieces of steak, adding a little more butter and herbs for good measure.
  5. Fold the sides of the foil over the steak and potatoes, sealing them tightly to ensure no steam escapes.
Cooking
  1. Place the foil packets on the grill or in the oven for 20-25 minutes, until the steak is cooked to your desired doneness and the potatoes are tender.
Serving
  1. Carefully remove from heat, let cool slightly, then unwrap and enjoy straight from the packet or serve on plates.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or on the grill at a low heat around 300°F (150°C).
