Ingredients
  

Pasta and Chicken
  • 8 oz 8 oz of pasta (such as fettuccine or penne)
  • 1 lb 1 lb of boneless, skinless chicken breasts, diced
Sauce Ingredients
  • 4 tablespoons 4 tablespoons of unsalted butter
  • 4 cloves 4 cloves of garlic, minced
  • 1 teaspoon 1 teaspoon of Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Parmesan cheese, for serving (optional)

Method
 

Cooking Pasta
  1. In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a bit of the pasta water.
Preparing Chicken
  1. Season the diced chicken breasts with salt, pepper, and Italian seasoning.
Sautéing Chicken
  1. In a large skillet over medium heat, melt 2 tablespoons of butter. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Making Garlic Butter Sauce
  1. In the same skillet, add the remaining butter and minced garlic. Sauté for about 1-2 minutes until the garlic is fragrant but not browned.
Combining Ingredients
  1. Return cooked chicken to the skillet, and add the drained pasta. Toss everything together, adding a splash of reserved pasta water as needed to help the sauce adhere. Adjust salt and pepper to taste.
Serving
  1. Plate your Garlic Butter Chicken Pasta and garnish with fresh parsley and grated parmesan, if desired. Enjoy while hot with family!

Notes

If you prefer, swap out chicken for shrimp or use diced vegetables for a vegetarian version. Pay attention to your cooking times; overcooked garlic can turn bitter. If you prefer a creamier sauce, consider adding a splash of heavy cream or a tablespoon of cream cheese to the garlic butter mixture. If you have leftovers, store in an airtight container in the refrigerator for up to 3 days or freeze for about a month.
