  • 1 pound chicken breast, cut into bite-sized pieces Substitutable with halal chicken thighs.
  • 2 tablespoons butter Used for melting and cooking.
  • 4 cloves garlic, minced Sauté until fragrant.
  • 1 pound asparagus, trimmed Should be bright green and slightly tender.
  • to taste Salt and pepper For seasoning the chicken.
  • 1 tablespoon lemon juice Drizzled at the end for flavor.
  • as needed Parsley for garnish Optional but recommended for presentation.

Cooking
  1. Begin by heating the butter in a large skillet over medium heat until melted.
  2. Add the minced garlic and sauté for about 30 seconds until it’s fragrant. Be careful not to burn it!
  3. Toss in the bite-sized chicken pieces, sprinkle with salt and pepper, and cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and golden brown.
  4. Add the trimmed asparagus to the skillet and continue to cook for another 3-4 minutes until the asparagus is bright green and slightly tender.
  5. Drizzle with lemon juice and give everything a good toss to coat.
  6. Lastly, garnish with fresh parsley if desired, and serve hot!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. This dish can be frozen for up to 2 months; reheat in a skillet over low heat.
