  • 1 tablespoon Dijon mustard Adds a slight tanginess.
  • 1 tablespoon lemon juice Freshly squeezed for a zesty kick.
  • 1 cup light olive oil Or any neutral flavored oil, like canola.
  • 3-4 cloves of garlic Minced, adjust according to your garlic preference.

Preparation
  1. Gather all the ingredients, ensuring the egg yolk is at room temperature for optimal results.
  2. In a mixing bowl, whisk together the egg yolk, Dijon mustard, and lemon juice until well blended.
  3. Stir in the minced garlic and a pinch of salt and pepper. Mix well.
  4. Begin adding the olive oil very slowly, just a few drops at a time, while whisking vigorously.
  5. Once it begins to thicken, you can increase the oil flow to a slow steady stream.
  6. Taste your aioli and adjust seasoning with additional salt, pepper, or lemon juice as necessary.
  7. Transfer to a serving bowl and enjoy immediately or refrigerate until serving.

Notes

Store aioli in an airtight container in the refrigerator. Best enjoyed fresh, will stay fresh for about 3-5 days. Avoid reheating, it’s best served chilled.
