  1. Start by mincing the garlic cloves finely to unleash that pungent flavor.
  2. In a medium-sized mixing bowl, combine the mayonnaise, minced garlic, lemon juice, and Dijon mustard. Stir until everything is well blended.
  3. Add salt and pepper gradually, tasting as you go. You want to achieve that perfect balance between the garlic’s zing and the creaminess of the mayonnaise.
  4. If you’re using herbs, chop them finely and fold them into the aioli.
  5. Cover the bowl with plastic wrap and place it in the fridge for about 30 minutes to allow the flavors to meld.

Notes

For a healthier version, swap mayonnaise for Greek yogurt. Adjust garlic quantities to taste: more for bolder flavors, or roast it for a sweeter profile. Store in an airtight container in the fridge for up to one week.
