For the Batter
  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 large eggs
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • a pinch salt
  • powdered sugar For serving

Method
 

Preparation
  1. In a mixing bowl, combine the all-purpose flour, sugar, baking powder, and a pinch of salt.
  2. In another bowl, whisk together the milk, eggs, and vanilla extract.
  3. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Lumps are fine, do not overmix.
Cooking
  1. Heat about 2 inches of oil in a deep skillet or frying pan over medium heat until a small drop of batter sizzles when added.
  2. Using a piping bag or squeeze bottle, drizzle the batter into the hot oil, creating small spiral shapes or circles.
  3. Fry for about 2-3 minutes on each side until golden brown.
Serving
  1. Once fried, remove the bites and place them on a plate lined with paper towels to drain excess oil.
  2. Dust generously with powdered sugar before serving.

Notes

Best served fresh. Store leftovers in an airtight container for up to two days. Reheat in the oven for best results. Can be frozen for up to a month.
