Preparation
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, combine the Funfetti cake mix, softened butter, and eggs. Mix until well incorporated and a soft dough forms.
- Gently fold in the sprinkles, ensuring they are evenly distributed throughout the cookie dough.
Baking
- Using a cookie scoop or your hands, form small balls of dough (about 1 tablespoon each) and place them on the prepared baking sheets, spaced about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers are still slightly soft.
- Allow the cookies to cool on the baking sheet for about 5 minutes, then transfer them to a cooling rack.
Assembly
- Once completely cool, spread a layer of vanilla frosting on the bottom of one cookie and top with another, forming a sandwich.
- Roll the edges of the sandwich cookies in extra sprinkles if desired.
