Ingredients
  

For the cookie dough
  • 1 box Funfetti cake mix
  • 1/2 cup unsalted butter, softened Make sure your butter is softened to room temperature.
  • 2 large eggs
  • 1/4 cup sprinkles And more for decoration if desired.
For frosting
  • 1 cup vanilla frosting Store-bought or homemade.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, combine the Funfetti cake mix, softened butter, and eggs. Mix until well incorporated and a soft dough forms.
  3. Gently fold in the sprinkles, ensuring they are evenly distributed throughout the cookie dough.
Baking
  1. Using a cookie scoop or your hands, form small balls of dough (about 1 tablespoon each) and place them on the prepared baking sheets, spaced about 2 inches apart.
  2. Bake for 10-12 minutes, or until the edges are set but the centers are still slightly soft.
  3. Allow the cookies to cool on the baking sheet for about 5 minutes, then transfer them to a cooling rack.
Assembly
  1. Once completely cool, spread a layer of vanilla frosting on the bottom of one cookie and top with another, forming a sandwich.
  2. Roll the edges of the sandwich cookies in extra sprinkles if desired.

Notes

Store your Funfetti Sandwich Cookies in an airtight container at room temperature for up to 5 days, or refrigerate for up to 2 weeks. You can freeze them for up to 3 months. Don't forget to let them sit at room temperature for about 15 minutes before reheating for the best texture!
