Preparation
- Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans with cooking spray or butter and line them with parchment paper.
- In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set it aside.
- In a large bowl, beat the softened butter and sugar together until light and fluffy (about 3-4 minutes).
- Add one egg at a time to the butter mix, beating well after each addition. Mix in the vanilla extract.
- Gradually add the flour mixture to the butter mixture, alternating with the milk, starting and ending with the flour mix. Make sure everything is well combined but don’t overmix.
- Gently fold in the rainbow sprinkles.
Baking
- Divide the batter evenly into your prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Once baked, let the cakes cool in the pans for about 10 minutes, then turn them out onto a wire rack to cool completely.
Frosting and Serving
- Once completely cool, frost with your favorite vanilla frosting, adding more sprinkles on top for a festive touch. Cut, serve, and watch everyone smile!
Notes
For a dairy-free version, use plant-based butter and a dairy-free milk alternative. Avoid overmixing the batter to prevent a denser cake. Use a kitchen scale for even layers.
