  • 2 3/4 cups all-purpose flour
  • 2 1/4 teaspoons baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup milk

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans with cooking spray or butter and line them with parchment paper.
  2. In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set it aside.
  3. In a large bowl, beat the softened butter and sugar together until light and fluffy (about 3-4 minutes).
  4. Add one egg at a time to the butter mix, beating well after each addition. Mix in the vanilla extract.
  5. Gradually add the flour mixture to the butter mixture, alternating with the milk, starting and ending with the flour mix. Make sure everything is well combined but don’t overmix.
  6. Gently fold in the rainbow sprinkles.
Baking
  1. Divide the batter evenly into your prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  2. Once baked, let the cakes cool in the pans for about 10 minutes, then turn them out onto a wire rack to cool completely.
Frosting and Serving
  1. Once completely cool, frost with your favorite vanilla frosting, adding more sprinkles on top for a festive touch. Cut, serve, and watch everyone smile!

Notes

For a dairy-free version, use plant-based butter and a dairy-free milk alternative. Avoid overmixing the batter to prevent a denser cake. Use a kitchen scale for even layers.
