Ingredients
  

For the brownies
  • 1 cup fresh cherries, pitted and halved Choose fresh cherries for the best flavor.
  • 1 cup sugar
  • 1 cup butter Melted.
  • 1 cup cocoa powder Sifted.
  • 4 large eggs
  • 1 cup all-purpose flour Can substitute with gluten-free flour.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C).
  2. In a small baking dish, spread the pitted and halved cherries evenly. Roast them for about 10-12 minutes or until soft and fragrant. Allow them to cool.
  3. In a large mixing bowl, melt the butter. Whisk in the sugar until well combined.
  4. Sift the cocoa powder into the mixture and blend until there are no lumps.
  5. Beat in the eggs, one at a time, whisking after each addition.
  6. Sift in the all-purpose flour and salt, folding gently until just combined.
  7. Fold in the roasted cherries carefully to distribute evenly.
Baking
  1. Pour the brownie mixture into a greased 9×9 inch baking pan and smooth the top.
  2. Bake for 25-30 minutes, or until a toothpick comes out with moist crumbs.
  3. Let cool in the pan for 10 minutes before transferring to a wire rack.
  4. Once cooled, cut into squares and enjoy.

Notes

Store in an airtight container at room temperature for up to 3 days, refrigerate for about a week, or freeze for up to 3 months. To reheat, microwave for 10-15 seconds or warm in the oven.
