Preparation
- Preheat your oven to 350°F (180°C).
- In a small baking dish, spread the pitted and halved cherries evenly. Roast them for about 10-12 minutes or until soft and fragrant. Allow them to cool.
- In a large mixing bowl, melt the butter. Whisk in the sugar until well combined.
- Sift the cocoa powder into the mixture and blend until there are no lumps.
- Beat in the eggs, one at a time, whisking after each addition.
- Sift in the all-purpose flour and salt, folding gently until just combined.
- Fold in the roasted cherries carefully to distribute evenly.
Baking
- Pour the brownie mixture into a greased 9×9 inch baking pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick comes out with moist crumbs.
- Let cool in the pan for 10 minutes before transferring to a wire rack.
- Once cooled, cut into squares and enjoy.
Notes
Store in an airtight container at room temperature for up to 3 days, refrigerate for about a week, or freeze for up to 3 months. To reheat, microwave for 10-15 seconds or warm in the oven.
