Preparation
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and red food coloring.
  5. Gradually add the dry mixture to the wet ingredients, blending until a soft dough forms. Fold in white chocolate chips if using.
  6. Scoop dough onto the prepared baking sheets, spacing them about 2 inches apart.
Baking
  1. Bake in the preheated oven for 10-12 minutes, until the edges are set but the centers appear slightly underbaked.
  2. Allow to cool on the baking sheets for 5 minutes before transferring to a wire rack.

Notes
