Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan or line it with parchment paper for easy removal.
- In a medium saucepan, melt the butter over low heat. Once melted, remove it from heat and allow it to cool slightly.
- In a large mixing bowl, combine the melted butter and granulated sugar. Mix well. Then, add in the eggs, one at a time, mixing until combined. Stir in the vanilla extract.
- In another bowl, whisk together the flour, cocoa powder, and salt. Gradually fold this mixture into the wet ingredients, being careful not to overmix.
- Gently fold in the chocolate chips and pitted cherries until evenly distributed in the batter.
- Transfer the batter to your prepared baking pan, spreading it evenly.
- Place the pan in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Once finished, remove the brownies from the oven and let them cool in the pan for about 10-15 minutes. Then, carefully transfer them to a wire rack to cool completely before slicing into squares.
Notes
For extra fudginess, consider adding a little more cocoa powder or a splash of coffee. Store in an airtight container for up to 4-5 days or refrigerate for about a week. These brownies freeze well for up to three months.
