  • 1 cup unsalted butter Melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup pitted cherries (fresh or frozen) If using frozen, thaw and drain

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan or line it with parchment paper for easy removal.
  2. In a medium saucepan, melt the butter over low heat. Once melted, remove it from heat and allow it to cool slightly.
  3. In a large mixing bowl, combine the melted butter and granulated sugar. Mix well. Then, add in the eggs, one at a time, mixing until combined. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, cocoa powder, and salt. Gradually fold this mixture into the wet ingredients, being careful not to overmix.
  5. Gently fold in the chocolate chips and pitted cherries until evenly distributed in the batter.
  6. Transfer the batter to your prepared baking pan, spreading it evenly.
  7. Place the pan in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  8. Once finished, remove the brownies from the oven and let them cool in the pan for about 10-15 minutes. Then, carefully transfer them to a wire rack to cool completely before slicing into squares.

Notes

For extra fudginess, consider adding a little more cocoa powder or a splash of coffee. Store in an airtight container for up to 4-5 days or refrigerate for about a week. These brownies freeze well for up to three months.
