Preparation
- Start by placing mini cupcake liners into a muffin tin.
- In a mixing bowl, combine the granola and honey or maple syrup (if using). Fill each cupcake liner with an even layer of the granola mixture, pressing down gently.
- Spoon the frozen yogurt over the granola layer in each cup, smoothing it out.
- Sprinkle fresh fruit on top of the yogurt in each cup.
- Place the muffin tin in the freezer for at least 2-3 hours or until the yogurt is solid.
- Once frozen, remove the cups from the muffin tin and peel off the liners.
- Enjoy immediately or store in an airtight container in the freezer.
Notes
These cups can be made a day in advance and stored in the freezer for up to 2 weeks. Let them sit at room temperature for 5-10 minutes before serving if needed.
