Ingredients

  • 1 bag Fritos corn chips
  • 2 cups corn (canned or frozen)
  • 1 cup diced tomatoes Fresh tomatoes preferred
  • 1 cup diced green bell peppers
  • 1/2 cup diced red onion
  • 1 cup shredded cheese (cheddar or your choice) Cheddar recommended
  • 1 cup ranch dressing
  • to taste Salt and pepper

Method
 

Preparation
  1. Open the cans of corn and drain them if necessary or thaw frozen corn beforehand.
  2. Dice the tomatoes, green bell peppers, and red onion to your preference.
  3. In a large mixing bowl, combine the corn, diced tomatoes, green bell peppers, and red onion.
  4. Gently fold in the shredded cheese.
  5. Pour the ranch dressing over the salad mix and stir gently to combine.
  6. Add salt and pepper to taste, mixing again to evenly distribute the seasonings.
  7. Fold in Fritos just before serving to maintain their crunchiness.

Notes

For best results, enjoy fresh and store leftovers in an airtight container for up to 24 hours. Avoid reheating. Add fresh lemon juice and extra Fritos for revitalizing.
