- Rinse the frika under cold water to remove any excess starch. In a medium pot, boil water, then add the frika. Reduce heat to low, cover, and simmer for about 10 minutes or until the grains are tender. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the finely chopped onions and sauté until they become translucent and fragrant, about 3-4 minutes.
- Stir in the diced potatoes and minced garlic. Season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally until the potatoes are golden brown and fork-tender.
- Once the potatoes are cooked, add the cooked frika to the skillet. Mix well to combine all ingredients, and let them cook together for an additional 5 minutes to allow the flavors to meld.
- Finally, stir in the crumbled or grated cheese until melted and well incorporated. Taste and adjust seasoning if necessary.

Notes
