  1. Rinse the frika under cold water to remove any excess starch. In a medium pot, boil water, then add the frika. Reduce heat to low, cover, and simmer for about 10 minutes or until the grains are tender. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the finely chopped onions and sauté until they become translucent and fragrant, about 3-4 minutes.
  3. Stir in the diced potatoes and minced garlic. Season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally until the potatoes are golden brown and fork-tender.
  4. Once the potatoes are cooked, add the cooked frika to the skillet. Mix well to combine all ingredients, and let them cook together for an additional 5 minutes to allow the flavors to meld.
  5. Finally, stir in the crumbled or grated cheese until melted and well incorporated. Taste and adjust seasoning if necessary.
