- Prep your ingredients by gathering all of them. Ensure to use day-old rice as it's less sticky.
Cooking
- Heat the oil in a large skillet or wok over medium-high heat until hot but not smoking.
- Add the mixed vegetables and sauté for about 3-4 minutes until they're vibrant and slightly tender.
- Push the veggies to one side of the skillet, pour in the beaten eggs, and scramble until fully cooked.
- Next, add the cooked rice to the skillet, breaking up any clumps with a spatula and mixing everything well.
- Drizzle in the soy sauce, add salt and pepper, and mix again to ensure each grain of rice is well-flavored.
- Finally, stir in the chopped green onions just before serving.

Notes
Use day-old rice for the best texture. Feel free to add chicken, shrimp, or tofu to make this dish heartier.
