  • 2 cups cooked rice (preferably day-old for best texture) Day-old rice is less sticky and ideal for frying.
  • 2 tablespoons vegetable oil For frying the ingredients.
  • 1 cup mixed vegetables (carrots, peas, corn) Feel free to choose your favorite veggies.
  • 2 eggs beaten Scrambled in the dish.
  • 3 pieces green onions, chopped Added at the end for flavor.
  • 2 tablespoons soy sauce Enhances the flavor of the rice.
  • Salt and pepper to taste

Preparation
  1. Prep your ingredients by gathering all of them. Ensure to use day-old rice as it's less sticky.
Cooking
  1. Heat the oil in a large skillet or wok over medium-high heat until hot but not smoking.
  2. Add the mixed vegetables and sauté for about 3-4 minutes until they're vibrant and slightly tender.
  3. Push the veggies to one side of the skillet, pour in the beaten eggs, and scramble until fully cooked.
  4. Next, add the cooked rice to the skillet, breaking up any clumps with a spatula and mixing everything well.
  5. Drizzle in the soy sauce, add salt and pepper, and mix again to ensure each grain of rice is well-flavored.
  6. Finally, stir in the chopped green onions just before serving.
  7. Dish out your fried rice, and enjoy!

Notes

Use day-old rice for the best texture. Feel free to add chicken, shrimp, or tofu to make this dish heartier.
