Ingredients

Main Ingredients
  • 2 medium medium-sized potatoes, diced into small cubes Opt for starchy potatoes like Russets for the crispiest results.
  • 1 large large onion, sliced (preferably yellow or white)
  • 1 pound smoked Polish sausage, sliced into rounds Ensure the sausage is free of any products if needed.
  • 2 tablespoons vegetable oil (or your choice of cooking oil)
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Method

Preparation
  1. Wash and dice the potatoes into small cubes. Slice the onion and the smoked Polish sausage into manageable pieces.
Cooking
  1. In a large skillet or frying pan, heat the vegetable oil over medium heat.
  2. Add the sliced smoked sausage to the hot oil and sauté for about 5-7 minutes until it starts to brown.
  3. Toss in the sliced onions with the sausage. Stir them together frequently until the onions turn translucent, about 3-4 minutes.
  4. Add the diced potatoes to the skillet, and season them with salt and pepper. Stir everything to combine well.
  5. Reduce the heat to medium-low, cover the skillet, and let it cook for about 15-20 minutes, stirring occasionally to prevent sticking. The potatoes should be tender and golden by the end of this cooking phase.
  6. Taste and adjust the seasoning if needed. Serve it warm, garnished with chopped parsley if desired.

Notes

Tip: Don't rush the cooking process and allow the sausage and onions to brown properly to deepen the flavor.
