Preparation
- Wash and dice the potatoes into small cubes. Slice the onion and the smoked Polish sausage into manageable pieces.
Cooking
- In a large skillet or frying pan, heat the vegetable oil over medium heat.
- Add the sliced smoked sausage to the hot oil and sauté for about 5-7 minutes until it starts to brown.
- Toss in the sliced onions with the sausage. Stir them together frequently until the onions turn translucent, about 3-4 minutes.
- Add the diced potatoes to the skillet, and season them with salt and pepper. Stir everything to combine well.
- Reduce the heat to medium-low, cover the skillet, and let it cook for about 15-20 minutes, stirring occasionally to prevent sticking. The potatoes should be tender and golden by the end of this cooking phase.
- Taste and adjust the seasoning if needed. Serve it warm, garnished with chopped parsley if desired.

Tip: Don't rush the cooking process and allow the sausage and onions to brown properly to deepen the flavor.
