Preparation
- In a mixing bowl, combine the shredded mozzarella and cheddar cheeses along with a pinch of salt and pepper. Mix them well.
- Take a Dorito and scoop about one tablespoon of the cheese filling onto the center. Gently fold the Dorito edges over the cheese to completely encase it. Press to seal gently.
- In three separate bowls, set up your dredging station: one with all-purpose flour, another with beaten eggs, and the last one with breadcrumbs.
Cooking
- Dip each cheese-stuffed Dorito first into the flour (shake off excess), then the egg, and finally into the breadcrumbs, ensuring they are fully coated.
- In a deep skillet or pot, heat oil over medium heat. You can test if the oil is hot enough by dropping in a small piece of bread; it should sizzle immediately.
- Carefully place the coated Doritos in the hot oil, a few at a time, to avoid overcrowding. Fry them for about 2-3 minutes on each side or until they turn golden brown.
- Remove the fried Doritos with a slotted spoon and place them on a paper towel-lined plate to drain any excess oil. Serve hot with your choice of toppings!
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in an oven preheated to 375°F (190°C) for about 5-10 minutes until heated through. Avoid microwaving to keep them crispy.
