Fried Cheese-Stuffed Doritos

Ingredients
  

For the cheese filling
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese Substitute with any mild cheese of your choice.
  • to taste salt and pepper
For the coating and frying
  • 1 bag nacho cheese Doritos (12 oz)
  • 1 cup all-purpose flour
  • 2 large eggs Beaten.
  • 1 cup breadcrumbs (panko for extra crunch)
  • as needed Oil for frying (vegetable or canola)
Optional for serving
  • salsa
  • guacamole
  • fresh cilantro

Method
 

Preparation
  1. In a mixing bowl, combine the shredded mozzarella and cheddar cheeses along with a pinch of salt and pepper. Mix them well.
  2. Take a Dorito and scoop about one tablespoon of the cheese filling onto the center. Gently fold the Dorito edges over the cheese to completely encase it. Press to seal gently.
  3. In three separate bowls, set up your dredging station: one with all-purpose flour, another with beaten eggs, and the last one with breadcrumbs.
Cooking
  1. Dip each cheese-stuffed Dorito first into the flour (shake off excess), then the egg, and finally into the breadcrumbs, ensuring they are fully coated.
  2. In a deep skillet or pot, heat oil over medium heat. You can test if the oil is hot enough by dropping in a small piece of bread; it should sizzle immediately.
  3. Carefully place the coated Doritos in the hot oil, a few at a time, to avoid overcrowding. Fry them for about 2-3 minutes on each side or until they turn golden brown.
  4. Remove the fried Doritos with a slotted spoon and place them on a paper towel-lined plate to drain any excess oil. Serve hot with your choice of toppings!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in an oven preheated to 375°F (190°C) for about 5-10 minutes until heated through. Avoid microwaving to keep them crispy.
