Main Ingredients
  • 4 pieces chicken breasts Ensure they are thawed and patted dry for best browning.
  • 1 cup salsa fresca
  • 1 cup shredded cheese (cheddar or Mexican blend) Can substitute for different types of cheese.
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken breasts dry with paper towels.
  3. In a small bowl, mix the cumin, garlic powder, salt, and pepper. Rub this seasoning mix all over the chicken breasts.
  4. Drizzle olive oil over the seasoned chicken and toss gently to coat.
Cooking
  1. Place the chicken breasts in a baking dish and bake for about 20 minutes until cooked through.
  2. Remove the chicken from the oven and top each breast with salsa fresca and shredded cheese.
  3. Return to the oven and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
  4. Let it rest for a couple of minutes before serving.
Serving
  1. Garnish with fresh herbs if desired, and serve warm.

Notes

For best results, check chicken is cooked to 165°F (75°C) with a meat thermometer. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 2 months.
