Preparation
- Preheat your oven to 375°F (190°C).
- Pat the chicken breasts dry with paper towels.
- In a small bowl, mix the cumin, garlic powder, salt, and pepper. Rub this seasoning mix all over the chicken breasts.
- Drizzle olive oil over the seasoned chicken and toss gently to coat.
Cooking
- Place the chicken breasts in a baking dish and bake for about 20 minutes until cooked through.
- Remove the chicken from the oven and top each breast with salsa fresca and shredded cheese.
- Return to the oven and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
- Let it rest for a couple of minutes before serving.
Serving
- Garnish with fresh herbs if desired, and serve warm.
Notes
For best results, check chicken is cooked to 165°F (75°C) with a meat thermometer. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 2 months.
