Method
 

Preparation
  1. Wash the fresh raspberries thoroughly and pat them dry with a clean kitchen towel.
  2. In a blender or food processor, add the raspberries and blend until smooth. Strain the puree through a fine-mesh sieve into a bowl to remove the seeds.
Cooking
  1. In a medium saucepan, combine the raspberry puree, sugar, eggs, and lemon juice. Whisk until smooth.
  2. Place the saucepan over medium heat, stirring continuously until the mixture thickens, about 8-10 minutes.
  3. Remove from heat and stir in the butter pieces and lemon zest until melted and combined.
Cooling and Serving
  1. Pour the mixture into a glass jar or bowl and allow it to cool to room temperature.
  2. Once cooled, cover tightly and refrigerate for at least one hour to set.
  3. Enjoy your Fresh Raspberry Curd on scones, pastries, or simply on a slice of bread.

Notes

For best flavor, always use fresh raspberries. Adjust sugar for desired sweetness and consider using other fruits for variations.
