Ingredients
  

For the peach caramel
  • 4 medium fresh peaches (sliced)
  • 1/2 cup brown sugar
  • 1/4 cup butter (unsalted)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
For the pastry
  • 2 sheets puff pastry (thawed if frozen)
  • 1 egg for egg wash beaten with 1 tablespoon water, optional for glazing

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a medium saucepan over medium heat, melt the butter. Add the brown sugar and cinnamon, stirring until combined and bubbly.
  3. Add the sliced peaches to the mixture and cook for about 5 minutes until they start to soften. Remove from heat.
  4. Pour the peach mixture into a lightly greased 9-inch round baking dish, spreading it evenly across the bottom.
Baking
  1. Roll out one sheet of puff pastry over the peaches. Poke a few holes in the top to let steam escape. Brush the top with the egg wash if desired.
  2. Place the baking dish in the oven and bake for 25-30 minutes or until the puff pastry is golden brown and cooked through.
Serving
  1. Once baked, let it cool for about 10 minutes before carefully inverting the dish onto a serving platter.
  2. Serve warm with your favorite toppings if desired!

Notes

Substitutions: Other seasonal fruits like nectarines or pears can be used instead of peaches. Store in an airtight container in the refrigerator for up to 3 days. To freeze, wrap tightly for about a month. Reheat at 350°F (175°C) for 10-15 minutes.
