  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 2 cups fresh peaches, peeled and diced Use ripe peaches for best flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Beat in the eggs one at a time, mixing well after each addition. Then, add the vanilla extract and stir.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually blend this into the creamed mixture, alternating with buttermilk, until just combined.
  5. Gently fold in the diced peaches, being careful not to overmix.
Baking
  1. Pour the batter into the prepared baking dish and spread it evenly. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  2. Once baked, allow the cake to cool in the dish for about 10 minutes before transferring to a wire rack.
