  • 1/2 cup chia seeds
  • 2 pieces ripe mangoes (diced)
  • 2 tablespoons honey or maple syrup Adjust to taste.
  • 1 teaspoon vanilla extract
  • Coconut flakes (for topping)

Preparation
  1. Combine the coconut milk, honey (or maple syrup), vanilla extract, and chia seeds in a mixing bowl. Whisk well to ensure all the chia seeds are evenly distributed and not clumping together.
  2. Let it rest: Allow the mixture to sit for about 5-10 minutes. This gives the chia seeds time to absorb the coconut milk and swell up. It will begin to thicken during this time.
  3. Stir again: After resting, give the mixture another good stir to eliminate any clumps of chia seeds.
  4. Chill: Cover the bowl and place it in the refrigerator for at least 2 hours, or preferably overnight. This allows the flavors to meld and the pudding to set.
  5. Serve: Once set, give the pudding a gentle stir. Divide it into serving bowls and top with the diced mangoes and a sprinkle of coconut flakes.

Notes

Storing Tips: Store in the refrigerator for up to 5 days in an airtight container. Not advisable to freeze, as the texture can alter once thawed.
