Preparation
- Wash the strawberries under cool running water, remove the green tops, and slice them into halves or quarters.
- In a large mixing bowl, combine the sliced strawberries with 1 cup of the granulated sugar and let them sit for 10-15 minutes.
Cooking
- In a large pot, combine the macerated strawberries, lemon juice, and pectin. Stir and bring to a rolling boil.
- Once boiling, add the remaining sugar all at once and stir vigorously.
- Keep boiling for about 1-2 minutes or until you reach your desired thickness. Remove from heat.
Jarring
- Ladle the hot jam into sterilized jars, leaving a little space at the top. Wipe the rims clean and seal them with lids.
Cooling and Storage
- Allow the jars to cool to room temperature before storing them in the refrigerator.
- The jam will thicken as it cools.
Notes
Store jam in the refrigerator for 3-4 weeks or freeze in airtight containers for up to a year. Avoid microwaving to retain consistency.
