Ingredients
  

For the fig filling
  • 2 cups fresh figs, chopped (about 12-15 figs) Substitute with high-quality dried figs if necessary.
  • 1/4 cup granulated sugar Used for the filling.
For the cookie dough
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar Remaining sugar for the dough.
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon baking powder
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method
 

Preparation
  1. In a saucepan over medium heat, add chopped figs and 1/4 cup of sugar. Stir occasionally for about 5 minutes until the figs soften. Remove from heat and let cool.
  2. In a large mixing bowl, combine softened butter and remaining sugar until light and fluffy. Add the egg and vanilla extract, mixing well.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture until a soft dough forms.
Forming the cookies
  1. Divide the dough into two equal portions. Roll each portion into a rectangular shape, about 1/4 inch thick.
  2. Place the fig filling in the center of each rectangle, spreading it evenly but leaving about 1/2 inch of dough around the edges.
  3. Gently fold the sides of the dough over the filling, pinching to seal the edges.
  4. Cut into 2-inch squares and arrange them on a baking tray lined with parchment paper.
  5. Bake at 350°F (175°C) for 15-18 minutes or until golden brown.
Cooling and Enjoying
  1. Allow the cookies to cool on a wire rack before serving.

Notes

For a richer flavor, consider adding crushed almonds or walnuts to the fig filling. Let cookies cool completely before storing to maintain texture. Store in an airtight container at room temperature for up to 3 days.
