Ingredients
  

Muffin Batter
  • 1 cup chopped fresh figs
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk Substitute with regular milk + lemon juice or vinegar if necessary.
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin or line it with muffin liners.
  3. In a medium bowl, combine flour, sugar, baking powder, baking soda, and salt. Stir until well mixed.
  4. In a separate bowl, whisk together buttermilk, vegetable oil, egg, and vanilla extract until smooth.
  5. Gently fold in chopped fresh figs into the wet mixture.
  6. Pour wet ingredients into dry ingredients and mix until just combined; do not overmix.
  7. Spoon the batter into the muffin tin, filling each cup about two-thirds full.
Baking
  1. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow muffins to cool in the tin for a few minutes before transferring to a wire rack.
  3. Enjoy warm!

Notes

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Freezes well for up to 3 months. Reheat in the microwave for 15-20 seconds or in the oven at 350°F for 5-10 minutes.
