Preparation
- Preheat your oven to 350°F (175°C).
- Grease a muffin tin or line it with muffin liners.
- In a medium bowl, combine flour, sugar, baking powder, baking soda, and salt. Stir until well mixed.
- In a separate bowl, whisk together buttermilk, vegetable oil, egg, and vanilla extract until smooth.
- Gently fold in chopped fresh figs into the wet mixture.
- Pour wet ingredients into dry ingredients and mix until just combined; do not overmix.
- Spoon the batter into the muffin tin, filling each cup about two-thirds full.
Baking
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool in the tin for a few minutes before transferring to a wire rack.
- Enjoy warm!
Notes
Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Freezes well for up to 3 months. Reheat in the microwave for 15-20 seconds or in the oven at 350°F for 5-10 minutes.
