Preparation
- Preheat your oven to 375°F (190°C).
- Grease a muffin tin or line with paper liners.
- In a large mixing bowl, whisk together the dry ingredients.
- In another bowl, whisk the melted butter, eggs, buttermilk, and vanilla extract until well combined.
- Gradually add the wet ingredients into the dry ingredients, mixing gently until just combined.
- Gently fold in the chopped fresh figs.
- Pour the batter into the prepared muffin tins, filling each cup about 2/3 full.
Baking
- Bake for 20 to 25 minutes, or until a toothpick inserted comes out clean.
- Cool in the tin for about 5 minutes before transferring them to a wire rack.
Notes
For a buttermilk substitute, mix regular milk with a splash of lemon juice or vinegar and let sit for 5 minutes. Store in an airtight container for up to 2 days or freeze for up to 3 months.
