Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup buttermilk
  • 1 cup fresh figs, chopped
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Grease a muffin tin or line with paper liners.
  3. In a large mixing bowl, whisk together the dry ingredients.
  4. In another bowl, whisk the melted butter, eggs, buttermilk, and vanilla extract until well combined.
  5. Gradually add the wet ingredients into the dry ingredients, mixing gently until just combined.
  6. Gently fold in the chopped fresh figs.
  7. Pour the batter into the prepared muffin tins, filling each cup about 2/3 full.
Baking
  1. Bake for 20 to 25 minutes, or until a toothpick inserted comes out clean.
  2. Cool in the tin for about 5 minutes before transferring them to a wire rack.

Notes

For a buttermilk substitute, mix regular milk with a splash of lemon juice or vinegar and let sit for 5 minutes. Store in an airtight container for up to 2 days or freeze for up to 3 months.
