Ingredients

Tart Shell
  • 1 tart shell 1 tart shell (store-bought or homemade)
Filling
  • 2 cups 2 cups fresh strawberries, sliced Use ripe, sweet strawberries for the best flavor.
  • 1/2 cup 1/2 cup granulated sugar
  • 1/4 cup 1/4 cup cornstarch Can substitute with all-purpose flour.
  • 1/4 teaspoon 1/4 teaspoon salt
  • 1 cup 1 cup water
  • 1 teaspoon 1 teaspoon vanilla extract
For Serving
  • to taste Whipped cream For serving

Method

Preparation
  1. If using a store-bought tart shell, prepare according to package instructions. If making your own, roll out the dough to fit a tart pan, press it into the pan, and bake until golden. Allow it to cool completely.
  2. In a medium saucepan over medium heat, mix the granulated sugar, cornstarch, and salt. Gradually stir in the water until smooth. Bring the mixture to a boil, stirring continuously, until it thickens—around 2-3 minutes. Once thickened, remove from heat and stir in the vanilla extract.
Assembly
  1. Pour the custard-like filling into the cooled tart shell, spreading it evenly. Artfully arrange the sliced strawberries on top.
Chilling
  1. Place the assembled tart in the refrigerator for at least an hour to set the filling.
Serving
  1. Just before serving, top with freshly whipped cream. Slice your tart and enjoy!

Notes

Store covered in the refrigerator for about 2-3 days. Best served chilled or allow to sit out for 15 minutes before serving.
